Great Minestrone Recipe

I purchased this book purely because I had a heap of veggies to use up so I wanted to make the Minestrone Soup. Madly ordering, paying for and waiting for my email to come through in my car outside the supermarket. Ding! Email received & bought what I didn’t already have ( perhaps 2 ingredients). I made the soup that evening & warmed it up and popped it into the slow cooker at work to provide lunch with my colleagues. I left the bacon out for the vegetarian and pre cooked some to add on top. 💯
