When I first heard that the next book to be launched was going to be American food I couldn't quite get my head around creating "skinny" American dishes. I thought burgers, fried chicken, pizza, wings, deep fried food... But boy was I wrong! This book has so many different dishes from various areas in the Americas... cajun, creole, Jamaican, Hawaiian, Mexican, Southern... the list goes on! This book has opened my eyes (and stomach) to the wonders of Americas Cuisine and I have really enjoyed every recipe I've cooked from the book so far. Congratulations Nik, Grant and team!!
